BANANA SPONGE PUDDING

1 cup mashed banana
½ tablespoon gelatine
4 tablespoons cold water
¼ cup boiling water
½ cup confectioner’s sugar
3 tablespoons lemon juice
1 egg white

Soak gelatine in cold water and then add boiling water to dissolve. Add sugar to banana pulp, then add lemon juice and gelatine. Beat egg white until stiff and add to the mixture. Chill in mold and serve with chopped nuts on top.
